JOE CARROLL, chef and owner of Fette Sau, is a master when it comes to barbeque and dry-rubbed meats sourced from small local farms. Chef JOSHUA LAWLER, owner of Farm and the Fisherman and Farm and Fisherman Tavern and Market, is all about local, sustainable ingredients.
