Pickled Eggs

Got leftover hardboiled eggs? Of course you do!


  • 2 dozen peeled, hard boiled eggs
  • 4 cup apple cider vinegar
  • 6 cloves
  • 5 jalapeños, chopped
  • 1 onion, chopped
  • 1 tablespoon of mustard seeds
  • 1 cup of water
  • 6 bay leaves
  • 1 tablespoon of hot sauce
  • 1 tablespoon of kosher salt


    1. Bring all ingredients except the hardboiled eggs to a boil. Then pour over the eggs in a sealable container. Let it sit for no less than 3 days and no more than 3 months in the refrigerator.

High Tunnel farming caught my eye because its extended growing season adds to the amount of local produce we get. While farm manager Aviva Asher was tidying up the winter crop to make way for spring, I discovered another benefit of local growing: use what you’ve got.
