Mashed Sweet Potatoes

Easy and delicious sweet potatoes, mashed with all natural ingredients. These sweet potatoes are sure to please vegetarians and vegans alike!
- 6-8 white sweet potatoes
- 3 tablespoons Earth Balance spread
- ½ teaspoon nutmeg
- 1. Heat oven to 400 degrees.
- 2. Wash potatoes and poke skin with a fork several times. Wrap in foil and place on a sheet pan. Bake in oven for about 45 minutes or until soft. Allow to cool and then slice in half and scoop out into a large bowl.
- 3. Mash potatoes with masher or this can be done with a mixer. Add the Earth Balance and nutmeg. Place potatoes into a 9 x 13 baking dish and bake at 350 degrees for 15 minutes or until slightly brown on top. Enjoy!
