Mashed Sweet Potatoes

Easy and delicious sweet potatoes, mashed with all natural ingredients. These sweet potatoes are sure to please vegetarians and vegans alike!

Ingredients

  • 6-8 white sweet potatoes
  • 3 tablespoons Earth Balance spread
  • ½ teaspoon nutmeg

Directions

    1. Heat oven to 400 degrees.
    2. Wash potatoes and poke skin with a fork several times. Wrap in foil and place on a sheet pan. Bake in oven for about 45 minutes or until soft. Allow to cool and then slice in half and scoop out into a large bowl.
    3. Mash potatoes with masher or this can be done with a mixer. Add the Earth Balance and nutmeg. Place potatoes into a 9 x 13 baking dish and bake at 350 degrees for 15 minutes or until slightly brown on top. Enjoy!

High Tunnel farming caught my eye because its extended growing season adds to the amount of local produce we get. While farm manager Aviva Asher was tidying up the winter crop to make way for spring, I discovered another benefit of local growing: use what you’ve got.
