Chicken Juarez

Tastes just like chicken… well chicken from south of the border. This Mexican dish is a snap to make, and tastes great. It's also good for entertaining some guests.
Makes 4 servings
Ingredients
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 3 tablespoons tomato paste
- 2 garlic cloves
- 2 tablespoons lime juice
- 1 chicken, cut into quarters
- 1 onion, thinly sliced
Directions
- 1. In a bowl, mix together the chili powder, cumin, tomato paste, garlic, and lime juice. Rub the paste over the chicken. Cover and chill at least 4 hours.
- 2. Place each chicken quarter and slices of the onion on a square of foil. Fold into a package and seal the edges. Bake in a moderate oven (350°) for 1½ to 2 hours. Allow your guests to open the individual chicken packets at the table.
