Sweet and Sour Sauerkraut

For this recipe you will need:

Ingredients

  • 4 shallots, thinly sliced
  • 3 large garlic cloves, finely chopped
  • 3 Tablespoon olive oil
  • 1 teaspoon cumin seeds, toasted
  • 10 whole allspice, crushed
  • 1 (28-oz) can whole tomatoes in juice
  • ? cup packed dark brown sugar
  • Kosher salt
  • Freshly ground pepper, to taste
  • 3 lb packaged sauerkraut, rinsed well and drained
  • 2 Tablespoons fresh thyme, chopped

Cook shallots and garlic in oil in a 3 ? to 4 quart heavy saucepan over moderately low heat, stirring occasionally about 8 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring, 30 seconds. Add tomatoes (including juice), brown sugar, salt and pepper and simmer, stirring occasionally and breaking up tomatoes, 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, stirring occasionally, until most of liquid is absorbed, about 15 minutes. Add thyme, and cook for 5 more minutes.

Goes well with any rich items because the sweet and sour cuts the richness of the food.

Serves 10 as a side dish.
