Chinese New Year Lemon Chicken

For this recipe you will need:

  • 2 tablespoond dry sherry
  • 4 scallions chopped
  • 1 piece of root ginger, shredded
  • (1 pound) boneless and skinless chicken breast, cut into 1 inch strips
  • 2 celery sticks, sliced
  • 4oz shitake mushrooms sliced with stems removed
  • 1 red pepper, cored, seeded, and sliced
  • Juice from 1/2 lemon
  • 2 tablespoons soy sauce
  • Shredded rind of 2 lemons
  • A few lemon slices to garnish
  • 2 tablspoons oil for stir-frying

Put the sherry, scallion and ginger in a bowl. Add the chicken, toss well to coat, then leave to marinate in the bowl for 15 minutes. Heat the oil in a wok or frying pan. Add the celery , mushrooms, red pepper, and the lemon jjuice. Stir-fry for one minute. Add the chickne and marinade, then cook for 3 minutes. Stir in the soy sauce and lemon rind them cook for a further minute. Pile into a warmed serving dish with brown stemmed rice and garnish with lemon slices.
